For Italian Manuel Tersigni, being a chef is in his blood – he grew up surrounded by food with his grandmother, a retired chef and restaurateur, cooking for him and teaching him how to make classic Italian dishes π©βπ³π
Manuel spent more than a decade honing his skills in high-end restaurants across Europe, including Romeβs βPer Meβ the 1 Michelin Star restaurant he opened in 2016 π§βπ³π
Luckily for us Manuel decided to open Rosetta in Mullumbimby to cook the food that is nostalgic to him: classic Italian dishes cooked as simply as possible to highlight high quality, seasonal ingredients. But to call his food simple doesnβt do it justice – Manuel elevates dishes and ingredients with expert execution and an excellent palate, and every dish on the Rosetta menu is exceptional πβ₯οΈ
Beef tartare served with polenta chips is tender and perfectly seasoned π₯π₯ House made linguine served with sweet juicy prawns, lemon, chili & garlic is exceptional ππ¦ Fresh fish cooked Sicilian style with lemon & olive oil and served with crushed potatoes & cannellini is exquisite ππ Chargrilled octopus is tender and super tasty served with the most perfect creamy mashed potato & kale ππ₯ Chocolate & almond caprese cake for dessert is an excellent way to finish your meal, especially paired with the delicious spiced pear sour cocktail π°πΈ
Rosettaβs drinks menu is excellent with a solid wine list that changes regularly and incredible classic Italian cocktails including the barrel aged Negroni which is a must-try π₯π
