Loft is an exciting new bar, combining food and cocktails – soon to open in the heart of Byron Bay.

“The vision was to create a cocktail bar with amazing food that taps into the Byron vibe. The concept is a bar that has modern Australian food and a natural atmosphere, a warm, airy and earthy environment. It’s relaxing and casual, it’s where you want to be.”

The exciting new space, is the culmination of years of experience in the hospitality industry and true love of Byron Bay that started early in Matt Hunt’s (the owner) life.

“Byron has always had a special place in my heart, I’ve been coming here for years with my family. There’s always been a gravitational pull to Byron, something that I can’t really explain. After starting businesses in Melbourne I continued to travel to Byron regularly, always dreaming that one day I could focus on my own concept for the town – that combined the Byron energy with a holistic approach to a food and beverage experience.”

Matt developed the unique Loft concept with the idea that locally supplied food and beverage, as well as the space should be equally considered.

“My idea for Loft was to create a large cocktail bar with food, married perfectly to create an unforgettable experience. You can come in at noon and end up being there all day and night. Great cocktails, wines, ten cold beers on tap – complemented by an incredible modern Australian sharing menu, which will be available all day. Great food and drinks to engage all your senses, whilst still being fun, approachable and affordable.”

The unique approach from Matt was to incorporate sustainable and responsible practices to the design, business and operations of Loft. The concept truly embodies the Byron Bay innovative and sustainable spirit.

“We have a big focus on supporting and working with local producers and suppliers. There are a lot of amazing things happening around the Byron Shire and we’re excited to be a part of that. A big part of our focus is responsibility of waste management; organic waste will be kept separate from other recyclables, with an effort to make Loft a plastic free environment. We are working towards a zero-waste model and will be constantly developing and improving our practices to have a positive impact on the community and environment.”

Loft will be a truly unique culinary experience, bringing together a passionate, energetic and customer focused hospitality team.

“You’ll be able to see your chefs preparing your food, slicing meats, shucking oysters and that’s something really special. This adds to the theatre and experience as soon as you walk up the stairs, with the space itself always approachable and relaxed.”

“You won’t be hurried out, in fact you’ll be encouraged to settle in and enjoy the food, diverse drink list and atmosphere.”

Loft will begin to take bookings soon, including Christmas parties and functions, Loft will be the spot to hang out, eat great food and sip on unique cocktails while enjoying tunes late into balmy summer nights.
